OUR STORY
At Poquitos we strive to present delicious Mexican cuisine prepared with ingredients that are the best of both worlds—outstanding local sourcing for our meats and produce; unique and direct sourcing for items essential to honoring the culinary traditions of Mexico. Inspired by the variety of culinary influences found in each town and city’s street food and restaurants, the menu at Poquitos is not specific to one region, but instead encompasses influences found throughout Mexico and Latin America.
Our inspiration for the name? Our sign that currently resides outside Poquitos Seattle! The original neon sign was salvaged in South Seattle and originally hung outside of a Mexican restaurant on Greenwood Avenue in Seattle through the early 80’s. The proprietor, pictured on the sign, was known for strolling through the restaurant, serenading his guests and playing guitar as he went.
Executive chef Manny Arce was integral to the opening of the original Poquitos location in Seattle’s Capitol Hill neighborhood in 2011. Arce, a native of Southern California, is well-versed in Mexican cuisine and brings to the kitchen his expertise from his culinary studies abroad.
Our teams at each location collaborate closely to bring you a menu and experience that is as fresh as it is inspirational. Poquitos has always sought to provide a comforting and friendly environment to everyone in the neighborhood. It’s a place to relax and enjoy food and drinks with friends and family, to make memories and share stories. We have an amazing team that work hard to foster the kind of community we value in each neighborhood. We’re looking for those rockstar humans who maintain a positive outlook, are intrinsically motivated, have integrity, and are committed to respecting the differences among us. If you embody these values, and approach life with a bit of humor, we would love to hear from you!
